Lemongrass Corn Chowder

Ingredients

1 Medium yellow onion, finely diced
1 Large carrot, shredded
3 Celery stalks, diced
3 Cloves garlic, minced
2 Stalks Lemongrass, cut into thirds and smashed using the back of the knife
1 tbsp Fix Hot Sauce Habanero Ginger Sriracha, plus more for garnish
2 Kaffir lime leaves (optional) or 2 bay leaves
1 tsp Grated lime zest
2 tsp Large russet potato, peeled and diced into ½” cubes
2 cups Corn, either fresh or frozen
1 Can of coconut milk (14.5 oz)
3 cups Chicken or veggie stock
Salt and pepper, to taste
Sliced scallions, for garnish
Crispy shallot topping
3 Large shallots, finely sliced
¾ cup Oil for frying
Salt, to taste

Directions

In a large pot over medium heat, saute onion, celery, carrot, and lemongrass until just translucent and fragrant, about 3 minutes. Add the minced garlic and Fix Hot Sauce Habañero Ginger Sriracha and cook for an additional 2 minutes.

Add the potato, corn, lime leaves or bay leaves and lime zest. Toss to combine. Then pour in the coconut milk and stock. Stir to combine and season with a pinch salt and pepper. Bring to a boil then reduce to a simmer and cook for 20 minutes, stirring occasionally.

Meanwhile make crispy shallots: Over high heat, add shallots and oil to a medium saucepan stirring frequently. Cook until shallots are lightly golden, about 10-12 minutes. In the meantime, line a baking sheet with paper towels. Using a sieve set over a bowl, strain off shallots then transfer to the paper towel lined baking sheet in an even layer. Sprinkle with salt, toss and set aside.

Remove lemongrass stocks and lime leaves and transfer 2 cups to a blender and blend until almost smooth. Stir puree back into the soup and stir to combine. Season with salt and pepper to taste. Serve immediately topped with crispy shallots, more Fix Hot Sauce Habañero Ginger Sriracha and scallions.
