Spicy Chicken Tortilla Soup

We all know weeknights can be hectic and busy schedules can leave you little time to prep for a gourmet meal. Look no further… the Fix kitchen has this simple Spicy Chicken Tortilla Soup recipe just for you during those busy weeknights!

Spicy Chicken Tortilla Soup

Ingredients

Ingredients For the Soup
1 can Fire roasted tomatoes
2 tbsp Hatch chili’s
2 tbsp Fix Hot Sauce Signature Sriracha
1 White onion
1 lb Chicken breast
1 tbsp Butter
½ tsp Salt
½ tsp Paprika
½ tsp Garlic powder
½ tsp Black pepper
1 tbsp Avocado or vegetable oil
4 cups Chicken broth
1 cup Water
1 can Rinsed black beans
For the Toppings
1 Lime
Tortilla strips
Avocado
Chopped cilantro
Shredded pepper jacket

Directions

Brush chicken with melted butter. Mix salt, black pepper, paprika, and garlic powder in a small bowl. Sprinkle the mixture on the chicken. Bake at 400* for 15 minutes in the air fryer. Remove chicken and cut into bite sized pieces.

Slice onion and place in the chopper. Add the whole can of fire roasted tomatoes, chilis, and sriracha. Heat a medium-sized saucepan with one tablespoon of avocado or vegetable oil. Add mixture that was made in the chopper and heat for 5 minutes. Add chicken, chicken broth, water, and can of rinsed black beans.

Place tortilla strips in the air-fryer for a couple minutes to give them a nice crunchy texture.

Serve with your favorite garnishes: tortilla strips, avocado, lime, shredded pepper jack. Even add some more sriracha if you’d like!
