Preheat oven to bake at 375°F degrees.
Using the olive oil spray, evenly coat each cup of the muffin pan. Add a sheet of wonton wrapper into each cup and bake for 7 minutes. Once wrappers are baked, remove and repeat the process to make more wrappers for filling.
Scoop the 2 avocados into a Molcajete or bowl. Smash with a pestle or fork.
Add the white onions, garlic, cilantro, jalapeño, and tomatoes into the Molcajete and mix all ingredients together. Squeeze the ½ lime into the mixture (to keep guacamole fresh).
Using the baked wonton wrappers, add a scoop of guacamole to each wrapper.
Once all wrappers are filled with guacamole, add the shrimp to each shell (depending on your preference, you can use cocktail shrimp or cooked shrimp).
