Got a charcoal grill and a mojoe griddle? Then skip the long lines from your favorite hibachi restaurant and have your own edition right from your home! This is a great summer recipe to host to your guests and we are ecstatic to share this with everyone!

    • 2 lbs chicken thigh
    • 2 lbs fresh shrimp
    • 4 zucchinis
    • 2 white onions
    • 3 lemons
    • Sesame seed (white)
    • 2 cups white rice
    • 1 package frozen mixed veggies
    • 2 cups of water
    • 1/2 a stick of butter
    • Teriyaki sauce (for grilling)
    • Soy sauce (for grilling)

    Heat up (2) full chimney starters with charcoals. Once the charcoals have ashed over (about 10-15 minutes), arrange coals on charcoal grate into a two zone fire. Double the layer of coals near the front and a single even layer near the back. This gives you a super hot area to get great char and flavor, but allows a cooler zone to let the ingredients sit or relax while working on other ingredients. Once complete, put the mojo griddle on top of the grill. You will know it is ready when water drops “dance” across the surface (5-10 minutes).

    The white rice can be cooked the night prior or the day of. To cook the white rice, you will need to wash the rice first. Measure 2 cups of white rice into a bowl, fill with cold water, rinse, and repeat a couple of times. Once you are done rinsing and draining the rice, there are two options for cooking:

    1. Rice Cooker: Using a rice cooker, transfer the rice into the pot and fill with 2 cups of cold water (for added flavor, use chicken stock instead of water). Close the lid to the cooker and press the button to start the process. This should only take about 10-15 minutes to cook.
    2. Stovetop: Using a stove to cook the rice, boil 2 cups of cold water into the saucepan on medium-high heat. Once the water is boiled, add the rice into the pan and boil for 3-5 minutes. Then turn the heat to low, close the lid, and let the rice simmer for another 15 minutes.

    Once the rice is done, scoop the rice into a bowl for later use.

    While the rice is cooking, prep the chicken, seafood and vegetables. Start by rinsing the zucchinis. Once done, julienne cut the zucchinis, chop the white onions, and set them aside into separate bowls.

    Next, wash and peel off the shells from the shrimp. Slice along the back to devein and place into a bowl for mixing. Add the salt and pepper to the bowl of shrimp and mix until combined evenly.

    Lastly, cut the chicken into smaller pieces and marinade with salt and pepper in a bowl. Once all items are prepped, now it is time to start grilling (ribeye steak is another excellent option for protein, just cube and season same as the chicken)!

    Time for the show! Start with spreading a little oil on the griddle and adding onions, vegetables, teaspoon of butter, tablespoon of soy sauce, and tablespoon of teriyaki sauce. Sauté for 3 minutes and push to the back of the grill.

    After vegetables and onions have been cooked, start with the chicken next. Repeat the same process over again by adding oil, butter, soy sauce, teriyaki sauce, and in addition, 1/2 of the lemon juice. Sauté for 5-10 minutes and then push to the back of the grill.

    Then repeat the same process with the shrimp. Once complete, remove the veggies and proteins on a plated dish.

    The final step is to make the fried rice. Combine the oil, white rice, frozen vegetables, couple pats of butter, soy sauce, and teriyaki sauce together. Mix the fried rice for 5 minutes and remove once completed.

    Once grilling is completed, plate each dish with some veggies, protein. and rice. Finish off the plate by pairing with some Fix Signature Sriracha and Fix Lemongrass Sriracha!
